"As a teenager, I used to ride my bike with friends from Tulkarm to Mukhalid (Netanya) beach. There were no checkpoints back then. It used to take us about 20-30 minutes and sometimes we used to bring back some fresh seafood, like fish, prawns, and octopus.  My mother used to grill the octopus, adding some amazing homemade pesto. This is where I was inspired to create a similar fusion dish. "
